« on: November 13, 2010, 12:06:34 AM »

Thought I'd chronicle the last Barbecue event of the season.

9lb of Angus Beef Brisket trimmed, and ready for seasoning

Applying the dry rub...

Ready for the grill.

The journey begins

While you were asleep, I have been keeping the charcoal lit.
Looking good after 8 hours of tending to the pit.

Total cooking time: 14hours

Look at how moist it is. There was a good fat cap on this cut of meat!

Time to grind. Everything was awesome.
