My new smoker!

I bought a new smoker last week and fired it up over the weekend.  I should have taken some pic's of the food but I did 3 full slabs of ribs, 2 whole chickens and 1.5lbs of bacon and had room to spare.

The Weber smoker will be at Carverfest.  Tom, Eddie and I are going to be smoking something pretty much every day.  I think Thursday is the day we are on the hook for cooking for the group.  I think the menu will be 8 chickens or a ham.

On another note, I really never knew how far off the Thermometers are that come with grills and smokers.  I invested $70 in a really good one.  The Thermometer on the Webber is reading 20 degrees too low.

I try to smoke as much as possible.  I should have smoked some ribs this weekend but was not feeling well on Saturday and Sunday I was busy helping a freind.

I did take it down to CF this year.

Smoked the following:
6 whole chickens
5 lbs of bacon
12 lbs pork shoulder
6 racks of ribs  3 spareribs and 3 baby back

Everything I cook on it comes out very good.  It was a very good by IMO!

I've got 20lbs of Salmon to smoke up this week-end for a friend at work. I get to keep 5lbs for myself. Kinda under the gun for it. Hope I don't screw it up. It's been about 20 years. I used to smoke up 60/80 lbs at a time in my ole fridge smoker back in Michigan.

I am looking to get my first one soon.  Lots of options and some notoriously bad cheap ones.  As with other grills it may be best to go brand - and it is hard to go wrong with a Weber!

A friend of mine and I bought bbqs after we graduated from college and ended up working for the same company.  I bought a Charbroil, he a Weber.  As the years unfolded and we had diner at each others backyards he saw me struggle with the Charbroil 9000 (will never forget the brand and model of that piece of shit!) while the Weber was as reliable as could be.  That F^%ing Weber always lit up at the 1st click of teh igniter and cooked evenly.  Needless to say,  I eventually (12 years later) bought a Weber.  Never owned a smoker though.
