Marathon smoking techniques

(1/1)

MasterBlaster:
I am a big fan of Brisket, and I've successfully pulled off quite a few
masterpieces myself. The biggest problem I have is the amount of time
it takes.

I lose sleep trying to keep the coals going during those 18+
hour marathon sessions to the point that by the time its done, I am dead tired.
And yes, I've tried using LP, its just not the same.

Well, I was recently talking to a guy from Tennessee about this, and he
told me that he used to be a bbq judge at one time. He shared with me a little secret
that may just help me get some sleep....

Get a good pile of charcoal burning, and then snake unlit charcoal off of it
inside the firebox. Over time, the coals will catch and keep things rolling for several hours.
I am dying to try this technique. I think I will do a dry run during the day to get an idea for
how to place the charcoal, and monitor the temperature as it progresses.

What do you guys think?  Any other suggestions for ways to soldier through the marathon?

When you start cooking at 10PM the night before till 4PM the next day,
You have to be drinking to fool yourself into thinking its a good idea in the first place.
